Carrot Cake Protein Pancakes
Blend:
3/4 cup buckwheat
3/4 coconut milk
1/2 large apple or 1 small apple
1 tbsp flax seeds
1 scoop plant based protein powder (vanilla flavour)
1/2 tsp of each baking powder and baking soda
cinnamon
nutmeg to taste
Then stir in 1 grated carrot.
Fry in a nonstick pan on medium heat. Top with a mixture of maple syrup, coconut butter and a bit of water to thin the mixture out.
These are seriously the best pancakes ever!! hehe
I don't have an actual recipe for the lentil curry, I just threw everything into the pan and cooked it together (added the kale and broccoli last though) Here's what I put in:
-red lentils
-water
-coconut milk
-salt
-carrots, celery, peas
-kale, broccoli
-mushrooms
-curry powder
-ground ginger
-turmeric
